Our 4 Favourite Soup Recipes

Winter is here, meaning it’s high time to be eating warm, bowl-based foods that make your insides happy.

The following list of soup recipes includes the easy, the healthy, the cheesy, and the kind with so many fillings that it’s probably a soup in name only. They’re all hot, comforting and satisfying—no gazpacho to be found here.

Glowing spiced lentil soup

Prep time: 15 mins
Cooks for: 20 mins

This Indian-infused dish simultaneously satisfies the craving for a hot soup and a takeaway curry. There are lots of spices involved but the cooking process is nice and easy. Take this opportunity to add to your spice rack—stock up once, and you’re set to spontaneously make this one many times in the future. It’s vegan-friendly, gluten-free and yet somehow still one the tastiest soups out there.

Broccoli cheese soup

Prep time: 15 mins
Cooks for: 30 mins

This recipe was made to mimic a broccoli cheese soup made by US restaurant chain Panera Bread (or so Ariel tells me). It’s a resounding success that makes you realise it’s not so hard to cook yourself a meal worthy of a restaurant kitchen. Copious amounts of cheddar bring the comfort, while broccoli and carrot alleviate the guilt. The difference made by a dash of nutmeg at the end is astounding—perfect for convincing guests you’re a culinary genius.

Creamy tomato tortellini soup

Prep time: 5 mins
Cooks for: 30 mins

I’m something of a soup convert, as in I really hated soups until my twenties. However, had I been introduced to this one at a young age, I would’ve seen the light much, much sooner. It’s difficult to determine whether this is a thick soup with mountains of tortellini and cheese, or actually a pasta dish drowned in tasty sauce. And it doesn’t matter. Difficulty-wise, it’s on par with making tortellini and a simple sauce to go with it, but the outcome feels more comprehensive and tastes so, so good.

Red Lentil Soup

Prep time: 5 mins (or less)
Cooks for: 25 mins

Carrot, celery, onion, red lentils, lemon juice and little else does sound boring as hell, but bear with us. Of all our soup recipes, this is the simplest and healthiest. 5 minutes into the cooking, the smell alone hints you’re on to something special. There’s a delicate balance of ingredients going on that unlocks a great taste and aroma when everything is frying in oil. A greek yoghurt topping at the end is allegedly optional, but I couldn’t do without it—it adds a layer of texture and nicely cools the first few mouthfuls.

Feeling more oriental? Borough Market’s Feng Sushi does great miso soups and the sushi they come with is even better.
